Illustrator files are not a format of their own. A modern .ai is a PDF with private Illustrator data inside it; an older one is EPS PostScript. Both are read from structures at the end of the file, and both are handled here.

%PDF-header, every xref section, the trailer and the%%EOFmarker are destroyed. - PostScript structure. For EPS-based files the
%!PS-Adobeheader and document structuring comments are overwritten. - Illustrator private data. The
AI9_and related private data blocks holding the editable artwork are destroyed. - Content streams. Entropy is scattered through the compressed artwork streams so nothing is carvable.

Modern ones are. Illustrator writes a PDF-compatible file with its editable artwork stored in private data blocks, which is why Acrobat can open many .ai files directly.
Does it handle old EPS-based .ai files?
Yes. The engine targets both the PDF and the PostScript structures, so either generation of the format breaks.
Will the PDF preview still open?
No. The PDF layer is destroyed alongside the Illustrator private data.
Are linked images affected?
Only embedded ones. Externally linked assets are separate files and are untouched.
